Of course there have been incidents of cheating and dealings outside of gaming law, but if one can credibly source systematic cheating by a casino or casinos, please post it up.

The book goes into casinos hiring shills to slow down shooters or take them off their rhythm while at the craps table.
They may throw the dice on the floor on purpose or drop their toupee on the table over the top of one of the die while jumping up and down with joy.
The shill will somehow stop time creating a different future for all the shooters. (while just a minute ago the shooter was on a roll)

Receiving a Players Card and getting rated in Baccarat is a very dangerous proposition. The book goes into that also.
At my casino that I frequent most of the players will play for hours on end till they get felted. (They can thank their Players Card for that)

I've been going into casinos in Nevada since I graduated from high school in 1985.
Casinos use all sorts of underhanded strategies at their table games. The stare down is the most common.

I couldn't edit my comment so I will respond.  You can disguise yourself better than The Jackal ever could, but casinos know every single player after their first few visits.  It's their responsibility.  I play with nothing and I had floor management recognizing and greeting me since like night two or three.  If you never get a player's card that will make no difference.  But whatev's on your houses.  At mine I speak with many staff all the time and they all talk the game as well from a player's perspective.  Hell, I often have dealers calling out smart play.

It is also very different to recognize a difference between actual interference and perceived interference. 
- For example, one should expect to see everything and anything in response to dealer changes under the sun from players with minimal experience to the most experienced that have played for a very long time.
- Substantial and repeated buy-in's most likely are running into gaming law compliance and regulation.
- Hosts can work in line with such secret players and if the gaming law allows or even doesn't allow a casino to back players it could definitely happen.

Players are easily shaken which is why blowing a lot of things off is very important to successful play.

Lots of fanfare and misc. ramblings in books like those.  Like the first subjects all part of any business, not just casino gambling.  Real gamblers and serious experienced gamblers know 100% wins come in short periods of time and then if they persist in continuing, what usually happens is 'the player beat down' and 'player out the door' with all his concentration and hard work as to the relevancy of the shoe with his expanded and warped mind and his new "I can change the shoe attitude'.  Happens every night.

Baccarat, actually a mixture of Watergate, attacking the Gotti Family and the famous ear biting Tyson fight leading to disqualification and a near riot.  Bac has all that & more.

Seriously, casinos do not change a dealer on baccarat because someone is winning.  Might be a small card room you are referring to in Southern California, but really-does not matter to them either because they cannot and do not bank their own games, it has to be a licensed banker, the casino makes the same on wins and loses, etc.  Dealers are timed unless they are a relief because a dealer needs to use the restroom or has another problem and has to be tapped out, etc.

Dealers don't change the game anyway.  Yes some will talk and ramble about what they think the outcome will be with known players, but their talk and actions don't mean squat.

Substantial and repeated buy in's also mean nothing to a player that concentrated and leaves fallacy alone.  Actually, many I know will wager against those types of players when the shoe is presenting itself contrary to what they are wagering causing them excessive losses, etc.  As far as regulatory, all casinos have to follow the $10,000.00 ID rule unless they are classifying it under government protocol as suspicious transactions.  Best to ID yourself and fill out the form to start with, then there are never hassles or problems, etc.

Hosts very seldom are on the floor next to a player for whatever reasons.  Doesn't come across right and in all my years of playing, hosts remove themselves from situations that might cause problems and thoughts, etc.  As far as a host backing a player, hosts have no decision making ability (except a please or can we extend some consideration to this player because this player has lots of friends that also lose money here on a regular basis etc., type of request) but it is all up to the casino cage to run the credit, bank account reference and available balances to verify credit lines (markers against checks) that the casino will issue, etc.
