A 5-5000$ spread is a serious proposition. If I had access to that game I'd run the Star style as written and make a pile, hey hey.

Some parts of the country 'EZ Bac' is also play Midi/Macau style.

EZ Bac designates the type of game it is with no commission and usually, Fortune 7, some have Panda 8 and some do not. 

Then there is Mini Baccarat where the dealer deals and there is no Fortune 7 or Panda 8, however especially out west, Vegas and California they have started side-bets on pairs.

Then there is Midi or Macau style where the players squeeze the cards.  Can be with or without commission as I said in EZ BAC above.

Reference the Lucky Dragon in Vegas.  I still cannot envision a casino with over $2k max in Vegas not being played Midi/Macau style.  Almost every off-strip casino has this style. 

As far as Asians playing non-midi, I see it all the time and there are many that prefer it over the squeeze game. There are pros and cons to both types.   Mainly, the squeeze game, slowly-chance to think-longer playing times if a player wants comps/time played, etc., and best one if the personalities are right--is the camaraderie.  However, with one or two players that get irked and have serious personality problems, they usually mess up the positive aura at those kind of tables frequently.  Then the wagering against or with certain players starts up.  Mini without squeeze allows players to concentrate more so on the game but the camaraderie of the game is usually pretty low the majority of the times.  Game moves faster in most casinos which is good and bad for various types of players. 

My suggestion and IMO, players that strictly want a fast game without personal involvement should stay on-line or find a casino property with stadium baccarat, that way those introverted and heads down in hands types of players can huddle up and be by themselves.  They usually ruin much of the positive camaraderie when it really gets flowing anyways.
